Almost like a spritz in its drinkability but with depth and joy at each sip.

Grapes

100% Cabernet Franc grown by Colin Janot in Saix. Certified organic.

Winemaking

80% of the grapes were destemmed and macerated in direct press juice from theremaining 20% with gentle punchdowns daily over 10 days. After pressing, the wine was aged in stainless steel tanks for 9 months. followed by additional aging in the bottle for 12 months.

This wine is unfined, unfiltered and has no added sulfites.
